Carrot Cake Overnight Oats Recipe – Healthy & Delicious


-1 cup oats

-1 cup milk/water or combo

-2 tbsp chia seeds

-1 tsp honey/maple syrup

-1/2 cup greek yoghurt/skyr

-2 tbsp pumpkin seeds

-1 carrot, grated

-1 tbsp sultanas

-2 tbsp crushed walnuts/pecans

-1 tbsp cinnamon

-1/4 tsp ginger

-1/4 tsp nutmeg


  1. Place all ingredients in a large mixing bowl or container.
  2. Mix thoroughly until well combined.
  3. Cover and store in the fridge overnight.
  4. In the morning, serve into 2 bowls and top with your favourite toppings. Enjoy!
