Pumpkin Pie Overnight Oats Recipe – Healthy & Gluten Free


  • 1/2 cup greek yoghurt
  • 1 cup of milk of your choice
  • 1/2 cup of pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger


  1. Place all ingredients into a large bowl or container. Mix until well combined.
  2. Place in the fridge overnight.
  3. In the morning, serve into two portions. I like to top with pecans and greek yoghurt and a drizzle of maple syrup. Enjoy!
