
Ingredients;
- 2 pieces of Atlantic Salmon (300-400g in total)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
Salsa:
- 2 tomatoes, diced
- 1 capsicum, diced ( I like to use 1/2 red and 1/2 yellow)
- 1/2 avocado, diced
- 1/2 red onion, diced
- 2 tsp olive oil
- 1 tbsp lemon juice
- salt to taste
Method;
- Coat salmon in olive oil, lemon juice & salt and pepper.
- Place a frypan on low/medium heat. Cook salmon skin side up first. Flip salmon once you can see it’s cooked through just under half way (5-10mins). Repeat on other side.
- While salmon is cooking, combine salsa ingredients and mix well.
- To serve place salmon on plate and top with salsa. I like to serve mine with some grilled corn too! Enjoy!
