Atlantic Salmon & Tomato Salsa Recipe – Healthy & Fresh

Ingredients;

  • 2 pieces of Atlantic Salmon (300-400g in total)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper

Salsa:

  • 2 tomatoes, diced
  • 1 capsicum, diced ( I like to use 1/2 red and 1/2 yellow)
  • 1/2 avocado, diced
  • 1/2 red onion, diced
  • 2 tsp olive oil
  • 1 tbsp lemon juice
  • salt to taste

Method;

  1. Coat salmon in olive oil, lemon juice & salt and pepper.
  2. Place a frypan on low/medium heat. Cook salmon skin side up first. Flip salmon once you can see it’s cooked through just under half way (5-10mins). Repeat on other side.
  3. While salmon is cooking, combine salsa ingredients and mix well.
  4. To serve place salmon on plate and top with salsa. I like to serve mine with some grilled corn too! Enjoy!
