Chicken Ramen Recipe – Healthy & Tasty

  • 1 cup shredded carrots
  • 1 cup spinach
  • 1 cup red cabbage
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 2 tsp sesame oil
  • 6 cups chicken stock
  • 4 tbsp soy sauce
  • 2 tsp sriracha
  • 100g vermicelli noodles
  • 400g chicken breast
  • 2-4 eggs soft boiled eggs, peeled
  • salt & pepper to taste
  • sesame seeds and shallots to serve

  1. In a large pot, bring to the boil stock, soy sauce, sesame oil, Sriracha, ginger and garlic.
  2. Once boiling, add chicken breast and boil for 10 minutes.
  3. Remove chicken breast and shred with a fork.
  4. Add in the vermicelli noodles and reduce the heat.
  5. Place chicken back into the pot. Add in carrots, spinach, red cabbage, salt and pepper. Cook for 3 minutes.
  6. Remove ramen from the heat. Serve in bowls. Top with a bowl egg cut in half, sesame seeds and shallots. I like to add a bit of extra Sriracha to mine for more spice! Enjoy

  1. That’s an interesting idea to add some boiled eggs to the ramen. I bet that would actually be pretty tasty. I’ll have to consider going to try that at a ramen restaurant to see if I want to try and cook it myself.
