
Ingredients;
- 1 cup shredded carrots
- 1 cup spinach
- 1 cup red cabbage
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 2 tsp sesame oil
- 6 cups chicken stock
- 4 tbsp soy sauce
- 2 tsp sriracha
- 100g vermicelli noodles
- 400g chicken breast
- 2-4 eggs soft boiled eggs, peeled
- salt & pepper to taste
- sesame seeds and shallots to serve
Method;
- In a large pot, bring to the boil stock, soy sauce, sesame oil, Sriracha, ginger and garlic.
- Once boiling, add chicken breast and boil for 10 minutes.
- Remove chicken breast and shred with a fork.
- Add in the vermicelli noodles and reduce the heat.
- Place chicken back into the pot. Add in carrots, spinach, red cabbage, salt and pepper. Cook for 3 minutes.
- Remove ramen from the heat. Serve in bowls. Top with a bowl egg cut in half, sesame seeds and shallots. I like to add a bit of extra Sriracha to mine for more spice! Enjoy
That’s an interesting idea to add some boiled eggs to the ramen. I bet that would actually be pretty tasty. I’ll have to consider going to try that at a ramen restaurant to see if I want to try and cook it myself.
