
Ingredients;
- 1 cup of oat flour
- 1 egg
- 2 small zucchini’s, grated
- 1 cup of corn kernels
- 1/2 red onion, chopped
- 1 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- salt & pepper to taste
Method;
- Place all ingredients into a large bowl and mix until well combined.
- Place a frypan on low-medium heat. Spoon mixture into fritter shapes and cook each side until golden brown. Mixture should make between 4-6 fritters depending on the size you make them.
- Serve on their own or with toppings of your choice. I love a poached egg and smashed avocado with mine!
