Corn and Zucchini Fritters- Healthy & Gluten Free


  • 1 cup of oat flour
  • 1 egg
  • 2 small zucchini’s, grated
  • 1 cup of corn kernels
  • 1/2 red onion, chopped
  • 1 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • salt & pepper to taste


  1. Place all ingredients into a large bowl and mix until well combined.
  2. Place a frypan on low-medium heat. Spoon mixture into fritter shapes and cook each side until golden brown. Mixture should make between 4-6 fritters depending on the size you make them.
  3. Serve on their own or with toppings of your choice. I love a poached egg and smashed avocado with mine!
